If you know what the italian language sounds like (maybe from watching gangster movies lol) if you see an italian word, even if you have no idea what it means, you know immidiatly how it should sound. Does that make sense? A dialog coach is there for you if you are having trouble picking up an accent. Very rarely as an actor do you do things in other languages though. You might have a character that is German, speaks with a german accent, and curses in german, but the rest of the lines are in English. They may or may not read some, but usually have people taking care of that for marketing purposes.
